Deli Farm Charcuterie specialise in producing award winning air dried salami & hams. Using the traditional Italian methods combined with modern technology to create perfect climatic conditions for drying and maturing. All recipes have been carefully developed, some are very traditional and some with a bit of an unusual twist. The pork used is sourced from a family run farm 25 miles away; most of the cereals grown on the farm are made into specially formulated rations for the pigs. Though using the prime cuts of meat ensures the salami, hams & bresaola do not have the chewy textures that you get from similar products made with the cheaper joints, it does make it more expensive. Deli Farm pride themselves for the provenance and ethos and are not prepared to sacrifice the quality for cost.
