Retail and catering butchers using meat reared only in the Cotswolds and in Gloucestershire. All lamb, pork and some beef are from our own farm assured farms. All beef is hung and dry matured on the bone for 28 days, lamb for 14 days and pork for 7 days. All the poultry and game we sell is from the Cotswolds and Gloucestershire.
